Kaaja is a Andhra Dessert. kaaja is simply layers of Maida (all purpose flour) fried in oil and soaked in sugar syrup. You can store this for days.
Oil:: 2 tbsp
baking powder:: 1/4th tsp.
water:: enough for needing a dough
OIL for frying the kaaja.
INGREDIENTS:
For the Dough:
Maida(all purpose flour):: 3 cupsOil:: 2 tbsp
baking powder:: 1/4th tsp.
water:: enough for needing a dough
OIL for frying the kaaja.
Sugar Syrup::
Sugar:; 4 cups
water:: 3 cups
lemon juice:: 2 tbsp.
METHOD::
- Mix all the ingredients for the dough and kneed the dough for 10 minutes and keep it covered in a bowl for 1 hour.
- After 1 hour make the sugar syrup with a single thread consistency by boiling the water and sugar. Add the lemon juice to the sugar so that the syrup won't be crystallized. keep the syrup on low flame .
- Now heat oil in a wide pan .make sure the oil is not very hot.You need to fry the kaaja on a medium flame so that all the layers fry properly.
- Kneed the dough once again and make same size balls out of it.
- Roll each ball of dough into a thin round disc shape.
- Take one of the disc and brush it with ghee and sift some rice flour on top of it so that when you put another layer of rolled dough on top of it ,they won't stick together and beautiful layers will come.
- Place another rolled disc on top of the first one and follow the same procedure.
- The layering of the dough sheets depends on the size of the kaaja u want to make. So U can decide how many layers u want to go with.
- In my case i did it with three layers each time and my sheets are bigger than the dinner plate.
- Once u put the layers together fold them from one end and cut 1/2 inch thick pieces from one end.
- Press each piece with the rolling pin 9 not so hard) so that they will gain the shape of kaaja as shown the pictures.
- Now fry them in the oil on a medium flame.
- Add them immediately in the sugar syrup after removing from the oil.
- Keep them immersed in the syrup for at least 15 minutes.Then take them out and keep them on a plate until they are little bit dried.
- Store them a dry place.
