This is one of my favourite dishes.Spicy brinjals in the curd will give u a delicious taste.Trust me u will find an excellent aroma with this one.............
the recipe as follows:
INGREDIENTS:
BRINJALS..................6,small size
CURD.........................1 cup
SALT...........................to taste
RED CHILLY POWDER......... 2 tsp
OIL........................................2tbsp
CORIANDER LEAVES......for garnishing
FOR THE MASALA:
ONION....................1 big
GINGER..................small piece
GARLIC..................3-4 flakes
CUMIN.................1 tsp
CORIANDER.......1tsp
CLOVES...............2
CINNAMON......1 small stick
ELACHI..............2
CASHEW..........4
COCONUT POWDER.....1tsp
Grind all the ingredients above together to a fine paste.Add salt and red chilly powder .Mix well and keep aside.
FOR CURD GRAVY:
SMALL ONION.................chopped
GREEN CHILLY...............3-4 chopped
SALT...................................to taste
TURMERIC POWDER......1 pinch
FOR TAMPERING:
GRAM DAL.........1tsp
URAD DAL.........1tsp
MUSTARD SEEDS......1/2 tsp
CURRY LEAVES
HING..................1 pinch
RED CHILLY......2-3
OIL......................1 tbsp
For the gravy mix onion ,green chilly ,salt and turmeric to the curd.
In a pan heat oil and add mustard seeds.
When they splutter add all other ingredients for tampering .
Once it over add this for the curd and mix well.
Keep aside.
THE METHOD:
- Now take the brinjals and make splits.
- Stuff with the masala mix .
- Heat a pan .Add oil.Add the stuffed brinjals and shallow fry.
- Cover with the lid .Make them cook till they became soft.No need to add water and all.
- When once they all well cooked take them out into a bowl.
- Pour the curd gravy on them.
- Garnish with coriander leaves...
