DHOKLA

DHOKLA is a gujarati dish and i love it.
The Gujaratis are one of the best vegetarian cooks. They use the simplest of ingredients and transform a dish into a mouthwatering delicacy. Gujarati cuisine is in many ways unique from other culinary traditions of India. It is one of the few cultures where a majority of people are vegetarians. The vegetarianism have originated from the religious background, ideologies and beliefs.
.Gujarat is known as the land of milk and butter. Therefore yoghurt and buttermilk are an integral part of most of Gujrati dishes.

dhokla with besan
INGREDIENTS:
Besan/gram flour..............1 cup
Yogurt..................................1 cup
Warm water..........................1 cup
Green chilly paste...............1 tsp
Ginger paste...........................1 tsp
Salt................................as per the taste
Lemon juice.........................2 tbsp
Baking soda..........................1 tsp
Oil.............................................1 tsp

FOR THE TAMPERING:
Mustard seeds.................1 tsp
Cumin seeds...................1 tsp
Sesame seeds..................1 tsp

FOR GARNISHING:
Dry coconut powder
Coriander leaves.

METHOD:
  • Whisk the curd.Mix in the besan and warm water.mix it without any lumps.
  • Add salt.Keep in a warm place for 4-5 hours or until fermented.
  • Grease and flour a microwave dish.
  • When once the batter fermented mix the green chilly paste and ginger paste.
  • In a small bowl mix the oil,lemon juice and baking soda.
  • Mix it in the besan mixture.Pour immediately into the greased dish .
  • Cook on high for 2 minutes or until completely done.(it depends on the dish and quantity u are using.if the plate in the microwave can't move,then cook the dhokla turning the pan the otherside also.)
SErve with garnishing and some lemon juice on it....
When i am preparing this one my daughter came to me and asked me that" i will also help..please amma" because i have given a chance to her to help me in cutting the banana....now she is taking the chance to help me in everything.......:-))
so i let her to mix the batter and all...
