Brinjal and Val papdi curry


INGREDIENTS:

Brinjal......1 big one or 6 small ones
Val Papdi(shelled).........1 cup
Green chillies......5
Ginger.................small to medium piece
Tamarind paste......1 tbsp
Salt...as required
Coriander leaves.....1/4 th cup
FOR tampering: mustard seeds,Red chillies,Urad dal,Gram dal,Hing(asefotida),Cumin seeds.
METHOD:
  • Grind green chillies,ginger and coriander leaves into a coarse paste.keep aside.
  • Cut brinjal into 1/2 inch pieces.Boil the val papdi and brinjal adding little bit turmeric.
  • Once everything is boiled well add the tamarind paste and salt and mix it well.
  • Now heat oil in a pan.do the tamering.( add everything for tampering at once into the hot oil at once).
  • When the mustard seeds started to crackle add the green chilly paste and fry for 5 minutes.
  • Now add the boiled brinjal and val papdi.Mix in the tampering well .Cover it with a lid and cook for osmetime.
  • Serve with hot rice.
