VANKAYA PERUGU PACHADI(Eggplant With Curd)



INGREDIENTS:

Eggplant.....1 big one
curd.............2 cups
Green chilly..5
Red chilly...2
Mustard seeds...1tsp
Cumin seeds......1tsp
Urad dal.......1tbsp
Curry leaves....4
Hing(asefotida)...a pinch
Oil...for tamepring
Salt...as required
turmeric powder....a pinch

METHOD OF PREPARATION:

  • Roast the egg plant as shown here.

  • Peel the skin off and smash the cooked eggplant with a sppon or a fork.

  • Add green chilly and smash them with hand into the eggplant mixture.

  • Add salt and turmeric.Mix with the curd and keep it aside.

  • Heat oil in a tamepring pan .When the oil is hot add red chiily,hing,mustard,cumin and urad dal and curry leaves.

  • When the tampering is odne mix it with the eggplant,curd mixture.

  • Serve with rice or chapathi.

You can add onion also to it.
