Ragada Patties








INGREDIENTS:

For Ragada:

White vatana(yellow peas)....2c

Green chilly........5

Corainder leaves....1/4 th c

Pudina(mint leaves)...1/4 th c or aamchur...1tbsp

Salt ..as required

Red chilly powder....1 tsp( as per ur tatse)

Tamarind paste....1 tbsp

Jaggery....2 tbsp

Haldi(turmeric)..a pinch

Garam masala....1 tsp


FOR patties:

Potato.......1kg

Semolina....1/4thc

Bread crumbs.......1/2 c

Coriander leaves...chopped 1/4thc

Mint leaves......handful chopped/aamchur ....1tsp

Salt...1tsp

Greenchilly....2chopped finely

Ginger chopped...1tbsp

lemon juice....1tbsp


Tamarind Chutney:

Tamarind paste...1/4thc

Jaggery/brown sugar....2tbsp

Salt...1/2 tsp

Red chilly powder.....1tsp

Mix everything and heat it in a pan until the mixture thickens into a paste kind of consistency.


Green chutney:

Mint leaves...2c chopped

Coraiander leaves....1c chopped

Green chilly...6

Sugar....2tsp

salt to taste

Lemon juice...2tbsp

Grind evrything together into paste, adding some water.

For Tampering:

Cumin ....1tsp

mustard...1tsp

Curry leaves...1 stalk

Hing(asefotida)...a pinch


For Garnish:


METHOD:

For ragda:


  • Wash and cook the yellow peas until well done.

  • Grind 2 tbsp of peas ,green chilly,coriander and mint /aam chur powder into a patse.

  • Heat oil in a pan and add cumin seeds,mustard seeds,hing(asefotida) and curry leaves.

  • Add the ground paste and fry for sometime.

  • Add salt,red chilly powder,haldi,jaggery or brown sugar,tamarind paste and fry until the paste leaves the oil.

  • Now add the cooked peas and add 1c of water.

  • Simmer for 5-10 minutes.

For patties:


  • For patties boil the potatoes.

  • Mash the potatoes and mix with all other ingredients.

  • Scoop the mixture with a medium sized ice cream scoop and make pat the mixture into round shaped patties.(u can make them into whatever shape u like.)

  • Shallow fry them on a tawa(flat pan) adding a little oil on both sides.

Assembling the Ragda patties:

Keep two patties on a plate.Put ragda on both of the patties.Garnish with tamarind chutney,Green chutney,chopped onion,chopped coriander,Curd and sev.
