Grated Carrot.............2 cups
Milk............................3/4th c
Sugar..........................3/4th cup
Clarified Butter/Ghee..1 c
Green Cardamom/Elaichi powder...1/4th tsp
Few Saffron Strands (optional)
Cashew nuts...............15
Raisins.......................8
- In a wide pan heat 2 tbsp of ghee and fry cashew nuts and raisins. Scoop them out and keep it aside.
- In the same pan heat the remaining ghee and fry the grated Carrot on medium heat. Keep mixing in between .don't burn the carrot.
- Fry the grated carrot until it gives a nice aroma .
- Add milk and cook the carrot mixture for 10 -15 minutes.
- Once the carrot is cooked well add the sugar.
- Cook it until the sugar dissolves and the carrot mixture comes together.
- Now add the Elaichi powder,Fried cashew nuts and raisins.Mix well.
- Add the saffron strands .
NOTE: To give more richness to the carrot halwa u can add 1/2 c of sweetened condensed milk instead of adding sugar. When u do this Reduce the milk to 1/2 c.
Serve either chilled or hot with a scoop of ice cream.
