Egg less Banana Muffins



All Purpose Flour/Maida.....2 1/2 cups
Mashed Banana..........1 1/2 cups
Sugar...........................1 cup
Curd/Yogurt.................3/4th cup
Vegetable Oil...............3/4th c
Baking Powder.............1 tsp
Baking soda..................1 tsp
Salt..................................1/4th tsp
Ground Cinnamon....1 tsp
Vanilla Extract........1 tsp
Your choice of Nuts chopped   1 c ( I used Almonds and Cashew nuts)




  • Preheat oven to 325 F . Line 2  12 cup muffin pans with cup cake liners.
  • IN a large bowl sieve  Flour, Baking soda ,Baking soda,Cinnamon  and salt .
  • In another bowl mix oil,sugar ,Curd and Vanilla essence with a hand mixture over medium speed until everything mixed well .
  • Now pour the wet ingredients into the dry ingredients and mix well with the help of hand mixture.
  • Mix in the mashed banana with a spatula until the banana mixture incorporated well with the cake mixture.
  • Add in the chopped nuts .
  • Fill the cupcake liners 3/4th full and bake for 25 -30 minutes.
  • Let them  cool for 10 minutes in the pan before transferring them onto a rack and cool them completely.
